Heya folks. I got to talking with some of the viewers in Twitch about the split pea soup I made. A few of them wanted the recipe, so, here it is:

Split Pea Soup
1 pound split peas
10 cups vegetable stock or water
1 white onion, chopped small
2 carrots diced small or 2-3 handfuls of baby carrots, diced small
1/2 - 1 pound bacon
1/2 pound pre-cooked smoked ham, cubed
1 1/2 tsp salt
1 1/2 tsp pepper
1 tsp garlic salt

Cook the bacon until it is done, but still chewy. Remove the bacon to drain & drain off most of the bacon grease. Save just a bit in the pan, then saute the onion, carrots, and ham in that pan for about 5-10 minutes.

Add the saute mix, peas, spices, and liquid to a large pot or slow cooker.

If on stovetop, simmer on low 4-5 hours. STIR VERY OFTEN, or you'll have a crazy mess at the bottom of the pot when you're done.

If in the slow cooker, cook on low 7-8 hours, stirring every hour.

I usually add the bacon halfway through cooking, but you can also add half the bacon in the last few minutes, let the soup sit for about 5 minutes, then serve & top each bowl with the remaining bacon. Pretty & delicious garnish :D

Enjoy!
