Gaming resolution : Gaming one screen 1920x1080 (this have been my goto, if bigger is posible i'll try it out. but that would have 2. priority over the 3. screen)
Peripherals?: no thankyou (well if any a suggestion to a sound system. currently useing Logitech Z-5 USB Stereo Speakers and Logitech G35 headset)
Will you do overclocking?: Nope have only basic understanding on the inner workings off a pc o_O
What are you planning to do with the pc?: 1.Gaming 2. Watching THE stream 3. Watcing movies 4. proberbly some school work.

Since you are not overclocking you do not really need a K series I7.

Perhaps look into getting an SSD, it increases the speed at which programs open.
The i7 6700 only supports 2133Mhz, while the K version can be overclocked to get 32000Mhz on the RAM, so cheaper RAM can be choosen.

-Windows 10 pro might be a better option due to several extra features, but this comes down to preference.
-For the 2 other monitors you need to look at weither you want IPS or TN panels. TN has a better response time while IPS generally has a better image quality in colors.(Watch out when buying three, because this system only has 2 DVI-D connections, so you need another monitor that can connect to either VGA or HDMI)
