The intel one uses Sata 6 Gbit/s slot and the Samsung one will use a PCI-e 3.0 4x so you can get both.(Side note the Sata ports 5 and 6 will lose function when using m.2, but still plenty of space for SSDs and HDDs)
I wouldnt get the intel one but get one of these,

With the Samsung 850 Evo 500Gb my personal choice

And if you need more storage you could go for an HDD as dump place for large files

How it's coming together so far, now that said, i did kinda pick the Gigabyte graphics card on a whim, seeing as i've had friends use them before, but i can't say for certain that it's what i'd need to play more modern games on PC. Thoughts?

The differences between the different 1080 are insignificant when comparing performace on modern games. All of them performe great and are even a bit overkill for 1080p, unless you wish to play on 4K.
Dont forget the case.
