Nope - the 2 non-gaming screens won't require much in the way of "gfx power" unless you fire up the mad music visualisations/3d websites n whatnot, so not a problem

Number of monitors has no effect on your ram, only the amount of applications and the tasks these applications perform does. For doing what you've mentioned here, 8GB should be plenty. That sounds almost exactly like what I do on my machine most days and of my 8GB, I rarely see it go over 6GB, if even that high.
The number of monitors will affect how hard your GPU runs, but with a R9 290, you'll have no problem.

That's a pretty beastly PCI-E 2x8pin cable to the GFXcard - Did it come with the case or the PSU coz it fits soooooo well!! Good thing your case wasn't a lot larger (or did you custom-trim it?)

Came with the PSU. Went with an EVGA NEX740B. It actually comes with 2 of them, in case I crossfire later

I had to cut the LEDS out of the budget, but I will probably buy some in a month or so.
