I actually gave that link to my mother, she is going to attempt to make it once we find out some alternatives for the ingredients as we can't get some of it in the UK.

An easy and good recipe i sometimes make :
take about 700g of boneless chicken legs
1 red paprika (fairly big, the actual vegetable not powder)
1 onion (medium-big)
2 cloves of garlic
1 hot pepper(optional depending on taste)
about 400g of tomato pulp
some parsley (fresh if posible)
now you could use about 2 small spoons of abodo(south american condiment mix) or just use 1 small spoon of oregana and about 1/4 of a small spoon of cumin if you can't find abodo(or make it yourself)
about 250-350 ml of blonde beer
3 small spoons of vegetable oil
salt, pepper, whatever else you wanna stick in there :D

So here it goes:
You mix the onion, paprika, garlic, tomatoes, parsley and hot pepper into a paste ( if you don't have a mixer you can use a grater but the onion is a PAIN to do)

In oil you fry the chicken legs on both sides, not too much.

You take out the meat and put it on a plate or grate and put in the paste, if you fried the meat in a skillet then you can just poor the remaining oil into a pot but it's better to just use the pot to fry the chicken because it's less to wash :D . You temper the vegetable paste for about 10 min.

You then add the meat in the pot along with the abodo, salt, whatever else extra you'd wish. You pour the beer and let it boil at a medium fire for about 15 min while mixing.
You then put a lid on it and let it on a small fire for about 30 min.

And it's ready you can serve it with rice, mashed potatoes or boiled potatoes.

** STRAWBERRY FUDGE**

INGREDIENTS:

... 1 16 oz can of strawberry frosting
1 12 oz bag of white chocolate chips
2/3 cup chopped pecans

DIRECTIONS:

Lightly spray an 9×9 pan ( or a 9 x 13 pan for thinner bars ) with cooking spray.

Put chocolate chips in microwave safe bowl and melt them,( not letting them burn) You could also use a double boiler.

Stir in entire can of strawberry frosting.

Stir in pecans.

Spread into pan and chill in refrigerator for 30 minutes.

Cut into squares and serve
i've made it with and without pecans but its still amazing either way

Wow! There are so many good things here. You guys obviously love sweets!  ;D And we need some conversion tables since my recipes are "standard" and other people's recipes are metric! Oh here's one thanks to Shivor! http://www.metric-conversions.org/weigh ... ounces.htm

Faye if you can make rainbow cheesecake and it doesn't wind up brown you're amazing!!

Shivor your recipe leaves me with a few questions...
Boneless chicken legs? You mean chicken thighs? I've never seen boneless drumsticks!
I have never ever seen a fresh paprika!
400g tomato pulp. Hmm. Is this homemade or canned? Is this just diced tomatoes?
My adobo is chipotle peppers in adobo sauce... not sure that's what you mean. Sounds like yours is dry?
HOKAY! Those are my questions! The recipe looks super tasty... nice and spicy and... wait a minute. Sit it on a small fire?! I don't have a small fire! Can I just pop it in my oven? It sounds super yummy but I think I'd have some technical difficulties while making it!

Yeah Laina I'm not super skilled in culinary English :D .
Yeah boneless chicken thighs. This is what i mean about fresh paprika i don't realy know how you call them there : http://images.stockfreeimages.com/589/s ... 892680.jpg (the big ones in the back). Yes abodo is by default dry, but i added replacements since it takes a bit to make a batch of it if you can't buy it. As for the tomato pulp it's always better homemade but canned works just fine. By small fire i mean turn the fire low, I've never tempered vegetables in the oven. If you have like an electric top part on your oven i guess turn that to low.
