When cohh plays a dex samurai build he should use 2 swords or twohand 1. A shield wouldn't realy fit the playstyle of a samurai. He could start with the swordsman class and could play a stranded samurai on his way to retrieve his lost pride/sword, until then he can use the scimitar.
He can get the Uchihgatana in Lost Bastille from McDuff. This should be farely early in the game and doesn't require farming for it in iron keep.
For the actual build it should be focused on dex, adaptility and end.
No shield is a fun run and could benefit from cohhs Bloodborne experience^^
Isn't the same playstyle but different starting stats?
Nope. A Warrior will use shield & dodge. A Swordsman will use primarily dodge & either 2-handed sword or 2 swords. You can play them differently but that means you'll have to allocate stat points at level ups in a way that basically wastes your starting high stats, which will be really punishing in this game, until you get your stats set right.
But, I was only using those as examples of some details we should have; there are more.

I wouldn't go as far as say it is 'punishing'. It take maybe 10 minute of farming to get your starting stats how you want them if you choose a deprived for exemple. Starting class really doesn't matter other than the equipement you start with.

It doesn't really matter though. You can get every stats to soft cap in a normal playthrough without farming. so there's really no stats to 'focus'.
Especially since Dex has really shitty scaling in this game. He'd be better leveling up both Dex and Str at the same time, even if he use only Dex weapons.

1st: Cohh doesn't really farm for leveling (sometimes for items, but I've only seen him do it for leveling a couple of times).
2nd: 10 minutes is an exaggeration.
3rd: That would completely defeat the purpose of voting for a build.
4th: This is all about the beginning. We understand that Cohh will play how Cohh likes after that point, but the voting is for the starting build.

The build should mean playstyle mostly i think, so Dex Samurai should be using Dex weapons without the shield. So it doesnt matter too much with what stats you start, you can kill Last giant with any weapon so easy and that gives you bunch of souls to dump into dex and adaptability. Later on he can focus into katanas or dual dex weapons. Powerstancing dual weapons can be very strong if you can keep dodging

I'd like to see a run with high dex and no shield.

I would like to see him play a dex samurai in light armor, wielding a Murakumo. The Murakumo would technically still fit the dex samurai build because it only needs 20 str and 20 dex to wield, with dex being it's main stat. Also the Murakumo is a zanbatō, which is a Japanese sword that was used by infantry men to cut down the horses of enemy cavalry. It should pair well with a katana.
