I'd love to see some badass Cleric run, with using only the light or dark spells and building a lot of the Luck stat. Feel free to edit this idea to make it more fun shogun Red.

glass cannon sorc build no vigor allowed
will be painful to play, but entertaining to watch!
EDIT: just to further add to this painful play-style, int and attunement must be primary focus of stats
str/dex can only be put to the required number for off hand wep, staff must always be equipped
rest of stats dont matter to much, do what u will with them, just make sure int/attn are the highest at all times
no vigor! at all! ever!!!
no miracales/dark magic
embering optional
npc summons can only be used as a last resort for beating a boss, and never used against reg mobs, nor mini-bosses

The Ember Dancer
"The Dancer is one of the most visually impressive bosses Dark Souls has ever had, from her form and movement to the cascade of lights and effects to please the eye, but what if the dancer wasn't just a boss, but the chosen ember herself."
"The Dancer is one of the most visually impressive bosses Dark Souls has ever had, from her form and movement to the cascade of lights and effects to please the eye, but what if the dancer wasn't just a boss, but the chosen ember herself."
- Premise of this build is quite simple. To use the Dancers weapon and Headgear (armor set optional) on a complete playthrough. Build will be played a a female protagonist, dual wield playthrough. Stat gains are dependant on the reqs for the weapon set itself.
- The Dancer must Dance!!! No enemy can left without witnessing themselves the dance in its purest form (no skips, mobs or otherwise)
- The Dance must go on!! No stopping to pick up Souls, ain't nobody got time for that! (You must always be moving forward, if you die, you may not retrieve your souls)
- All true productions have money invested in special effects! (No blessings, Hexes and Sorcery are allowed)
- Multiple Acts in Big Dance Promotions are a thing! (All sidequests must be attempted)

Dishonorable Ninja (inspired by Red Eye) - Open to some tweaking of guidelines from more experienced players
Dual wield DEX build
Only Swords, daggers, and staves allowed
No Heavy Armor, no shields
Must Kill, or refuse help from, all optional and non-essential NPCs (i.e. Onion Bro, Giant shooting arrows at top of tower)
Vigor limited to 1 point every 10 levels
No Damage spells allowed, only utility
Dual wield DEX build

Swashbuckler
Rapier, may use shields but only small shield.
Light or no armor (encumbrance under 40%).
May use bows, but not crossbows.
A swashbuckler is always looking for a good fight or a challenging enemy to prove himself (all boss run)
He is a good sport in a fight (friendly gesture to bosses before engaging them, no backstabbing bosses, but riposte is allowed)
He is most certainly a lady's man (Any side quest given by a female character must be taken.)
But he is very discerning of his allies (Side quests only from "bro" characters i.e. Onion Bro, Thief Bro.)

But as it boosts bleed and poison try to incorporate this in some way. Maybe a Scythe run as these deal bleed damage, whips would also be interesting as a build.
